Vita, have you got a copy of William and Mary Ann's marriage certificate? If so, doesn't it give William Dobson's occupation? There is a public tree on ancestry which doesn't actually have an image of the marriage cert but gives the date as 16 Mar 1859 at Islington Register Office, with Mary Ann's address given as 5 St James Crescent. The Pearsons are at that address on the 1861 census although the surname looks like Barson (I've posted a link on your William Adderson Pearson thread).
The same tree on ancestry gives William Dobson's occupation as ladies' shoemaker with a date of 15 Mar 1859, so I assume it comes from Mary Ann's marriage certificate. I'll have a look for him later as I have to go out just now. |

One of the public trees on ancestry has this as the 1841 census entry for your Dobsons:
1841 census on ancestry Payn St, St Mary Islington West William Dobson 45(?) Shoemaker Y Mary Ann Do 32 Do Binder Y Mary Ann Do 2 Y And they have this as your Mary Ann jr in 1851, but of course we would need to try to verify this somehow: 1851 census on ancestry 8 Pulteney Street, Islington West Thomas Goose Head Mar 43 Engineer & Printer Middx St George Bloomsbury Lydia Do Wife Mar 45 Middx St Geo Han Sq Ann Do Daur 12 Middx Islington Thomas Do Son 6 Middx Islington Jane Do Daur 3 Middx Islington Mary Ann Dobson Visitor 11 Middx Islington |

This could be her baptism, given the address on the 1841 census, but there is no date of birth given, just date of baptism:
11 Dec 1847 All Saints, Battle Bridge, Islington: Mary Ann, parents William & Mary Ann Dobson, 4 Payne St, Boot & Shoe Maker. There are also these baptisms which could belong to the same family: 1 Nov 1835 St Luke Finsbury, Susanna Elizabeth dau of William & Mary Ann Dobson, Seward Street, Shoe Maker, born Aug 17th 24 Dec 1837 St Luke Finsbury, William Henry born Nov 18th, parents William & Mary Ann Dobson, 42 Seward Street, Shoe Maker And there is a burial for William Henry Dobson, infant, 13 Jul 1838, at St James Clerkenwell, abode Payne St, White Conduit Fields. |

The William Dobson from that 1841 census is still at Payn(e) St (Number 2) in 1851.
William Dobson wid 57 cordwainer b Somerstown (living alone) and in 1861 this may be him too: William Dobson wid 65 shoemaker b do not know That second one is recorded as St George East Industrial School in East Ham, Essex, but think that may be the pages before this one.

Mary Ann Dobson buried 24 Nov 1850 St Mary, Islington, abode Payne Street, age 42. Would explain why Mary Ann jr is a visitor with another family in 1851.

If you know for sure that your Mary Ann's mother's maiden name was Taylor, then this could be the marriage:
London marriages on ancestry 8 Sep 1834 St Pancras, William Dobson OTP widower & Mary Ann Taylor OTP spinster, by banns, witnesses Emma Archer and Emanuel Archer. But if you're not sure about the name being Taylor, there are some other William Dobson / Mary Ann marriages in the area around the same time. |

Not sure it goes anywhere: Thomas Goose was married to Lydia Gray.
