Default Which parents?

I have a William WILEY born 1799 in Stillington, Yorkshire.

Confirmed on the 1851 census.

Looking on the IGI for Stillington, there are two William Wiley's born 1799.

first one: born 7 Feb 1799, bap 10 Feb 1799, parents George and Ann

second one: born 8 Mar 1799, bap 11 Mar 1799, parents Robert and Ann

Which one?

William has a son Robert but doesn't have a son George, well not one I can find anyway.

Should I leave this or would it be too much of a leap of faith to plump for Robert?

I would say it would be too much of a leap of faith to assume it's Robert without further checking, yes. I would look for burials in case one (or both!) died young, look at the names of the witnesses at William's marriage, see if any of the family have relatives with them on any census, look to see if either of the possible fathers left a will.

Best leave it for the moment then, can't get up to Yorkshire. I have the NBI, nothing on there.
Can't find a marriage on the IGI. It's pre 1837.

Wife dies 1841-1844 as he married again. Only know that she was from Yorkshire.

Dead end for the moment then.
