This looks like the right family in 1851:
Village of Hirwain, Aberdare, Glamorgan
William Jones Head M 49 Engine Tender Brecon(?)
Ann Do Wife Do 42 Glamorgan Hirwain
Evan " Son U 21 Blacksmith Do Do
Margaret " Dr " 17 Working Out Do Do
Gwenllian Jones Dr U 15 Working Out Glam Hirwain
Thos Jones Son 13 At Home Do Do
Elizabeth " Dr 8 Scholar Do Do

Reference is HO107/2460 Folio 492 Page 34. The place name does say Hirwain but maybe it means Hirwaun, which is 4 miles from Aberdare? (*pretends to know about Welsh geography*)

I should add that I didn't read the details you had given for 1841 as I was working back from 1871 and 1861 to 1851 to try to get the right family, so now I look, I would say you have the right family in 1841 since the matching Evan's occupation in 1851 is Blacksmith.
