Elizabeth Ray - where is she in 1861?

Elizabeth Pridham Ray died in Cornwall in Jun qr 1869. She married widower James Ray in 1826.

I have her in 1851 as a widow, a grocer, with her children in St Blazey, near St Austell. However, no trace of them in 1861.

The children were:
Richard born 1829 St Blazey
James born 1837 Luxullian
Elizabeth born 1841 St Blazey

Can anyone spot her or her children in 1861?
