Looking at the 1861 census, I would say your next move is to get the birth certificate of Evan's son Hopkin Jenkins born about 1855-6 Leckwith. There is a likely birth registration in Cardiff district Sep 1855 (vol 11a page 201). This will give you Mary's maiden name and then it will be easier to look for Evan and Mary's marriage.

The birth cert arrived, and from that I have been able to progress to finding and ordering a marriage certificate for Evan.
