Kate marries a John Lyon in Northampton 6 Jun 1898 giving her name as Catherine Jones, 42, spinster, daughter of Daniel Jones, last maker. Witnesses to their wedding are William Ross and Martha Jane Dix. Kate / Catherine is with John Lyon on the censuses from 1891 onwards but not with him in 1881. Her birthplace is Shoreditch on the 1891 census and London on the 1901 and 1911. On the 1939 Register her dob is 31 Mar 1856. I assume her death is the Catherine Lyon death registered Jan-Mar 1941 Northampton, age 79. (John Lyon died in 1912.)

I thought I had found Catherine / Kate's birth registration as Kate Jones, Apr-Jun 1858 St Luke, but the online GRO birth index has that birth as illegitimate. I'm having trouble finding the family after 1861 or finding Daniel and Mary Ann's marriage, or the children's birth registrations which would give Mary Ann's maiden name. Can anyone find anything, please?

There is a likely death for Daniel Thomas Jones Oct-Dec 1876 London City, age 47, but I haven't found him on the 1871 census.

That 1871 census looks promising; it's very hard to read, but Daniel's occupation is last maker.

All three of them are shown as born in Shoreditch, though.

I found a public tree on ancestry with Walter on it, but it had the wrong parents for him (a Daniel Jones, carpenter, and Mary Leonard.)

Earlier on, I was looking at possible birth regs for the children and found a Walter and a Henry both with MMN Kennington, but I couldn't find one for Catherine / Kate, and there was a Mary Ann Jeannette born in 1850 in St Giles in the Fields, so I decided it was probably a red herring, but I have just found this on the 1851 census:
