Hello could anyone tell me if Somerset Wills are online and if not where they are kept?

As far as I can see, you have to search the "England & Wales Published Wills & Probate Indexes, 1300-1858" database, and you can type Somerset into the Publication Title box to select only the Somerset indexes:
