Mary is 53 in 1891, not 1881 (William is a widower in 1881), according to transcriptions.
In 1901 William is a retired fireman at Lower Mains Rd, Dollar, age 79, according to ancestry, but no Mary.
Scotland's People has a death for a William Nicol at Dollar in 1901, age 79. Hopefully the death cert will give details of his parents (and of Mary). They also have a death for a Mary Nicol at Dollar in 1896, age 58.

Oops, I forgot to check SP for Catherine's death - Catherine Nicol death in Dollar, other name Ferguson, 1877, age 51.
Couldn't wait for Santa. Bought some credits.
William Nicol death cert:
Died 3 June 1901, engineman, widower of Mary Leslie or Moody, Lower Main Dollar. Father: William Nicol, farmer (dec). Mother .................. MS............ Cause of death: Senile decay, bed sores, blood poisoning, one month. Informant: Peter Nicol (son).
Just checked William's second marriage, which gives both parents' names:
5 September 1884 according to rules of Presbyterian church
William Nicol, widower, engine keeper, to Mary Leslie, domestic servant
Father: William Nicol, innkeeper (dec)
Mother: Ellen Nicol, MS Brown (dec)

SP has the marriage of William Nicol and Mary Leslie, 1884, Clackmannan district.

Catherine Ferguson died on 4 January 1877. Married to William Nicol, fireman at Dollar bleachfield. Father: Peter Ferguson, farmer (dec). Mother: Jean Ferguson MS Stewart (dec). Cause: Heart disease. Informant: Peter Nicol (son).

There are a couple of possibles for William in Clackmannan in 1841 but not with family. One a machine maker age 22 and the other an ag lab age 20 (according to ancestry.)
I can't find a William Nicol / Ellen Brown couple on anything at the moment.

My searches are coming up with nothing for William Nicol and Ellen Brown. Have tried searching on Helen, but no luck either. Not to fret - I'm chuffed that I've filled in some gaps today thanks to your prompting.
